Prawn and chicken sandwich


    This recipe works best as a warm open face sandwich. This simple, delicious and satisfying sandwich is perfect for a light lunch with a fresh salad and great for using up leftover chicken.

    Serves: 1 

    • 1 tablespoon olive oil
    • 2 garlic cloves, thinly sliced
    • 1/2 roasted chicken breast, diced
    • 100g prawns, cooked
    • salt, to taste
    • ground white pepper, to taste
    • 1 tablespoon chopped fresh parsley
    • 2 slices bread, of your choice
    • 1 tablespoon grated Parmesan cheese

    1. Heat olive oil in a frying pan and cook and stir garlic over a medium heat, until fragrant. Add chicken and prawns and cook until heated through. Season with salt and white pepper to taste and stir in parsley.
    2. Toast the bread and top with the chicken and prawn mixture. Sprinkle Parmesan cheese over and serve.
