Coconut ginger rice

    A creamy and tasty dish with jasmine rice, coconut milk and ginger. A perfect side dish to a larger meal.

    Ingredients
    Serves: 4 

    • 200g jasmine rice
    • 1 tin coconut milk
    • 250ml water
    • 3 large slices fresh root ginger
    • 1 teaspoon salt

    Method
    Prep:2min  ›  Cook:15min  ›  Ready in:17min 

    1. In a small saucepan combine all ingredients. Stir and bring to the boil. Cover, reduce the temperature to low and simmer for about 15 minutes. Stir the rice occasionally and add some more boiling water, if needed.
    2. Before serving, remove the ginger slices.
