Rinse the cranberries and drain well. Rinse the orange with hot water, dry, and cut unpeeled into wedges. Remove the seeds.
Depending on desired consistency, mash, chop or blend the cranberries and orange together by hand, with a meat grinder or in a food processor. Add sugar to taste and let the sauce chill in the fridge for a day or two.
This is a great sauce to make ahead of your big feast as it keeps well for several days.
