    About this recipe: A quick and tasty meal comprised of seasoned chicken breast, carrots and a fruity orange sauce. A fun and delicious combination of flavours.

    • 1 chicken breast fillet, thinly sliced
    • salt and pepper to taste
    • 2 tablespoons oil
    • 1 onion, thinly sliced
    • 2 carrots, peeled
    • 1 orange, juiced
    • 150ml chicken stock, warmed
    • 1 teaspoon cornflour

    1. Season the chicken breast with salt and pepper. Heat the oil in a frying pan and brown the meat on all sides until no longer pink. Remove from the pan and set aside.
    2. Add onion to the pan and cook and stir over a medium heat until soft. Slice the carrots into ribbons with a potato peeler and add to the onions. Cook and stir for a few minutes.
    3. Return the chicken to the pan, pour in the orange juice and cover. Simmer for about 5 minutes, until the vegetables are soft and the chicken is cooked through.
    4. Pour the liquid from the pan into a small saucepan and bring to the boil. Reduce the heat to a simmer and add the cornflour. Whisk continuously until the sauce thickens.
    5. To serve, arrange the chicken, onion and carrots on a plate, and pour the orange sauce over.
