This is a basic vegetable rice side dish that you can jazz up with some seasonings. Sometimes I add some leftover roast chicken and readymade salsa if we're eating it as a main dish.
Place rice in a microwave safe bowl; pour cold water over rice. Cook in microwave on High, stirring and checking every 5 minutes. When water has been mostly absorbed, add butter and mixed vegetables and season with salt. Mix well and cook for a further five minutes.
