Stir fried vegetables with oyster sauce

    A delicious stir fried vegetable dish with oyster and soy sauce, finished with some chopped coriander. Enjoy on its own, with some rice.

    Serves: 4 

    • 1 tablespoon oyster sauce
    • 1 tablespoon soy sauce
    • 2 tablespoons water
    • 1/2 teaspoon cornflour
    • 2 tablespoons vegetable oil
    • 1/2 medium onion, finely sliced
    • 2 cloves garlic, finely chopped
    • 100g baby sweetcorn, halved on the diagonal
    • 100g sugar snap peas or mange tout
    • 1 red pepper, sliced
    • 1 carrot, cut into matchsticks
    • 2 tablespoons roughly chopped coriander

    1. Mix together the oyster sauce, soy sauce, water and cornflour in a small container.
    2. Heat the oil in a wok over medium to high heat. Add the onion and stir fry for 30 seconds. Add the garlic and continue cooking for another 30 seconds.
    3. Add all the vegetables and stir fry over high heat for 3 to 4 minutes. If the wok is too dry add a tablespoon water.
    4. Add the sauce, and continue to cook for another minute.
    5. Add the coriander, stir and serve.

    To serve

    I like to serve this with my Braised chicken with orange and black bean sauce.

    I modified the recipe a bit with some brocolli and mushroom. The sauce still the same. I also add some pepper powder since i don't use red pepper.  -  25 Nov 2014
