About this recipe: An impressive dessert for a special occasion or buffet table, this ring of light choux pastry is filled with fresh peaches and a fluffy mixture of fromage frais and whipping cream. It's ideal for entertaining because the pastry ring can be baked ahead of time (see our recipe on this site). Serve decorated with raspberries and gooseberries.

Use 500 g (1 lb 2 oz) mixed strawberries and raspberries in place of peaches. * Instead of vanilla, flavour the cream mixture with the finely grated zest of 1 lemon or 1 small orange, or 1 tsp ground cinnamon or ginger, or a piece of preserved stem ginger, drained of syrup and finely chopped. * Sprinkle the filling with 30 g (1 oz) toasted flaked almonds before replacing the top of the pastry ring. * For a lower fat filling, use 250 g (8½ oz) fromage frais and 3–4 tbsp whipping cream. * Make a coffee and banana choux ring. For the filling, whip the cream with the fromage frais and 1 tbsp coffee-flavoured liqueur, then fold in 4 sliced, firm bananas.
Peaches are an excellent source of vitamin C. A medium-sized peach provides as much as three-quarters of the recommended daily requirement of this vitamin for adults. * Whipping cream is lower in fat and calories than double cream. When whipped and mixed with fromage frais, it provides a luscious yet healthier alternative to whipped double cream.
