Chicory and orange salad

    A healthy salad with chicory, oranges, walnuts and red onion. A nice combination of flavours and colour, perfect as a main or a side dish.

    Serves: 4 

    • 12 walnuts
    • 400g chicory - root and core removed, leaves shredded
    • 2 oranges, peeled and segmented
    • 1 red onion, thinly sliced
    • Dressing
    • 2 tablespoons vinegar
    • 1 teaspoon sugar
    • salt
    • 3 tablespoons olive oil
    • 3 tablespoons orange juice
    • ground black pepper to taste

    1. In a dry frying pan over a medium heat, toast the walnuts until lightly brown.
    2. Combine shredded chicory leaves, oranges and red onion. Toss.
    3. For the dressing:

    4. Whisk together the vinegar, sugar, salt, olive oil and orange juice. Season with pepper.
    5. Add the toasted walnuts to the chicory, add the dressing to taste and toss all ingredients together to serve.
