Don's spanish salmon burgers

    A Spanish salmon treat for the whole family. Packed with flavour, these burgers are simple to make and even simpler and tastier to eat.

    Serves: 4 

    • 2 potatoes
    • a dash milk
    • 450g (1 lb) fresh salmon, skin and bones removed, roughly chopped
    • 100g smoked salmon, roughly chopped
    • ½ onion, finely chopped
    • 1 tablespoon dill, finely chopped
    • lemon juice to taste
    • 1 egg yolk, lightly beaten
    • salt and freshly ground black pepper
    • plain flour
    • sunflower oil

    1. Peel potatoes and cook in a saucepan with lightly salted water, until soft. Drain and mash with a little milk.
    2. Combine and blend the fresh salmon with smoked salmon in a food processor.
    3. Mix in onion, dill, lemon juice, egg yolk and seasoning. Add mashed potatoes to thicken mixture sufficiently to roll into balls. Roll mixture into balls with lightly moistened hands. Roll in flour and flatten into burger shapes.
    4. Heat oil in large frying pan, add burgers and cook on medium heat, turning to ensure they brown on both sides, until fish is just cooked through.
