Sugar free and gluten free apple cupcakes

    Who said a healthy life had to be devoid of treats? These cupcakes are gluten free, sugar free and taste like heaven. I recently have started using yogurt in my cake recipes, it has been a great addition making them moist and fluffy. Yogurt is a huge part of my diet as it is full of beneficial bacteria that helps my digestive tract.

    Makes: 14 cupcakes

    • 300g ground almonds
    • 100g butter
    • 2 eggs
    • 1/2 teaspoon stevia
    • 2 apples
    • 100g whole milk yoghurt
    • 2 tablespoons coconut oil

    Prep:15min  ›  Cook:10min  ›  Ready in:25min 

    1. Set oven to 180 C / Gas 4.
    2. In a food processor blend the ground almonds, butter, eggs and stevia.
    3. While blending cut one apple up roughly and discard the seeds and stalk, add this into the food processor.
    4. Slowly add in the yoghurt to the food processor, when it is fully mixed turn the food processor off.
    5. Slice the other apple into thin slices.
    6. Grease cupcake trays with coconut oil and evenly place the cake mixture into each container (should make 14 cupcakes).
    7. Place thinly sliced apple on top of each cupcake.
    8. Place in the oven and bake for 10 – 12 minutes, until a skewer inserted in the centre of a cupcake comes out clean.

    I wish I had added a little bit of brown sugar. They're more of a savoury recipe despite the apple and the sweetener. They'd be nice with a bit of sweetened cream cheese.  -  19 Sep 2017
