Turkey and tomato omelette

    This is the perfect breakfast for leftover Christmas dinner. The recipe is for one, but you can easily double or triple the ingredients to serve more.

    Serves: 1 

    • 1 handful of turkey pieces
    • 3 cherry tomatoes, more for serving
    • 2 eggs
    • 1 splash of milk
    • salt and pepper
    • a few drops of oil

    1. Cut turkey into small pieces and place in a jug. Cut tomatoes into thin slices and add to jug also. Add eggs, a splash of milk and a sprinkling of salt and pepper.
    2. Heat up a small frying pan over low heat and add a few drops of oil so the omelette will not stick to the pan.
    3. Whisk all ingredients in jug, until they are well mixed. Pour into the frying pan and wait until the side is lightly browned. Flip the omelette and cook on the other side.
    4. When the omelette is cooked to your liking, remove it from the pan and serve with fresh tomatoes.

    A simple omelette using leftovers is always a welcome addition to my morning repast. I served mine atop a bed of sauteed spinach to add even more nutritional benefit.  -  03 Feb 2015
