Succotash Joe's way

    An easy side dish or accompaniment. Succotash a corn based dish with carrots, ham, bacon, spring onions, onions, red pepper and fine beans. I had never heard of this before, and whilst my cooking abilities and knowledge of ingredients is limited it's not a bad effort of recreating it.

    Serves: 4 

    • 3 rashers bacon, cut into strips
    • 1 large white onion, diced
    • 1 red pepper, diced
    • 1 (400g) tin sweetcorn, drained
    • 1 (400g) tin chopped tomatoes, drained
    • 1 (400g) tin fine beans, drained
    • 3 slices ham, diced
    • 3 tablespoons natural yoghurt
    • 3 spring onions, diced

    1. Cook the bacon with the onion and red pepper over low heat until onion is translucent and bacon cooked.
    2. Add the sweetcorn, green beans, chopped tomatoes and ham and warm through.
    3. Mix in the yoghurt and take off the heat and serve either warm or cold. Garnish with spring onion.


    'Appy daze - This can be served warm or cold, I normally add some dried parsley for presentation. A decent side dish or accompaniment.
