Succotash Joe's way

Succotash Joe's way

About this recipe: An easy side dish or accompaniment. Succotash a corn based dish with carrots, ham, bacon, spring onions, onions, red pepper and fine beans. I had never heard of this before, and whilst my cooking abilities and knowledge of ingredients is limited it's not a bad effort of recreating it.

'Appy daze - This can be served warm or cold, I normally add some dried parsley for presentation. A decent side dish or accompaniment.
