Microwave small chocolate cupcake brownies

    Lovely microwave brownie cakes. It's a recipe that I found on this website that I tweaked and made my own. It works quite well.

    Serves: 8 

    • 150g butter
    • 200g sugar
    • 65g unsweetened cocoa powder
    • 1 teaspoon vanilla extract
    • 2 eggs
    • 100g plain flour
    • 100g chocolate chips
    • icing sugar to dust

    Prep:10min  ›  Cook:2min  ›  Extra time:10min cooling  ›  Ready in:22min 

    1. Melt the butter in the microwave on high for about 30 to 40 seconds. Add the sugar, cocoa and vanilla in that order and mix well.
    2. Add the eggs, mixing slightly after each one. Add the flour and chocolate then mix well.
    3. Get a small silicone cupcake tray and put a scoop of mixture in each one so it's about half-full. There's no need to grease it or put cases in.
    4. Put in the microwave for about 1 to 2 minutes. Leave in the cases for about 10 minutes so they can cool properly. Dust the tops however you like.
