About this recipe: An easy to prepare roast chicken with an exciting twist of orange and cumin. Enjoy with traditional roast dinner fixings, or try with pasta or rice.


Serves: 4 

  • 180ml orange juice
  • 175g buckwheat honey
  • 1 to 2 tablespoon ground cumin
  • salt and pepper to taste
  • 1 (2.5kg) whole chicken

  1. Preheat oven to 200 C / Gas 6.
  2. In a small bowl whisk together orange juice and honey until honey is dissolved. Add cumin and salt and pepper to taste.
  3. Place the chicken on a roasting rack and pour some water into the roasting tray. Tie the legs together with kitchen string. Brush the chicken evenly with the orange-honey mixture.
  4. Place the chicken in the preheated oven and then immediately reduce the temperature to 180 C / Gas 4 basting frequently. Roast the chicken for 20 minutes for every 500g in weight.


If the skin gets too dark, cover with tin foil.
If buckwheat honey is not available, substitute for regular honey.
