Chocolate covered almond biscuits

    These decadent and delicious almond biscuits are a treat at any time. Try with an espresso for a match made in heaven. They also happen to be gluten and dairy free!

    Makes: 20 biscuits

    • 4 egg whites
    • 325g caster sugar
    • 120g ground almonds
    • 60g plain chocolate, finely grated
    • 100g plain chocolate, melted
    • 1 teaspoon coconut oil
    • 50g whole almonds

    1. Pre-heat oven to 160 C / Gas 3. Line a baking tray with baking parchment.
    2. In a small bowl, whisk egg whites until stiff.
    3. In a separate bowl mix together the sugar, ground almonds and 60g grated dark chocolate. Slowly fold in the egg whites.
    4. Spoon the mixture onto the baking parchment in 7cm rounds.
    5. Bake in the preheated oven for 25 minutes until firm. Remove and cool on a rack.
    6. Combine the remaining 100g melted chocolate with the coconut oil and spread over the cooled biscuits. Decorate with whole almonds.


    For professional looking results you can use edible wafer papers. Use 7cm wafer papers and spread the mixture 1.5 cm thick on each paper and place on the baking tray. You can find wafer papers in speciality shops or online. Gluten free wafer papers are also available.
