Mediterranean style leeks with lemon

    This Greek inspired side, is for leek and lemon lovers everywhere. A tasty, full of flavour dish to accompany a myriad of main dishes. Complements fried or grilled fish to a "T".

    Serves: 4 

    • 4 tablespoons extra virgin olive oil
    • 3 cloves garlic, finely chopped
    • 1 tablespoon sugar
    • 1kg (2 lb) leeks, white parts finely chopped
    • 1 lemon, juiced
    • salt and freshly ground black pepper

    1. Heat oil in a large frying pan over medium low heat. Add garlic and sugar and sauté, stirring, until slightly caramelised. Stir in the leeks and sauté for about 10 minutes, until slightly browned.
    2. Drizzle with lemon juice and season with salt and pepper. Cover and cook on very low heat for about 15 to 20 minutes, until tender.


    Can use some of the tender green parts, if necessary.
