Roll out one puff pastry sheet to .5cm thick. Cut into 9 squares and place on a greased baking tray.
Cut each apple into 8 slices, and take out the core.
Place a slice of apple on each corner of a pastry square, creating a frame. Repeat with the remaining apples and squares.
Put in the oven for 12 minutes, or until light brown and puffy. The apples will be slightly caramelised, and slightly soft.
Place the squares on serving plates. While still warm, top with 1 to 2 scoops of ice cream in the centre of the apple 'frame'. If desired, drizzle with caramel sauce and sprinkle with chocolate chips. Serve straightaway.
They don't taste very good microwaved if you want to reheat it, so why don't you just cook a few of them and keep the rest in the fridge for another day!
