    About this recipe: This is a thin sauce made by mixing freshly chopped mint, sugar and vinegar. After the flavours have melded - try it before serving and add more sugar if it tastes too sharp. Perfect with roast lamb! It tastes so much more flavourful than sweet mint jelly.

    • 2 tablespoons finely chopped fresh mint (no stems)
    • 2 tablespoons boiling water
    • 1 heaped tablespoon sugar, or to taste
    • 3 tablespoons white wine vinegar

    1. Place the chopped mint in a bowl. Add boiling water and stir well. Add sugar and vinegar; stir until sugar has dissolved.
    2. Set aside to cool and allow the flavours to blend, about an hour. It's also perfectly fine to leave it longer, such as the same length of time it takes your lamb to roast.
    3. Stir well, taste and add more sugar or vinegar depending on if you prefer it sharp or sweet.
