About this recipe: Orange cake is common in the Valencia area of Spain, where the best oranges are allegedly produced. Very easy to prepare, this is a delight to both the eye and the palate.


Serves: 8 

  • 175g (6 oz) biscuits
  • 55g (2 oz) butter, melted
  • 700g (1 1/2 lb) cream cheese
  • 55g (2 oz) sugar
  • 85ml (3 fl oz) fresh or quality orange juice
  • 280g (10 oz) mandarins or preserved oranges
  • chocolate shavings

  1. Smash the biscuits and mix them with the melted butter. Spoon the mixture into a baking tin greased with butter and chill in the fridge for 15 to 30 minutes.
  2. In a separate bowl, beat the cheese, sugar and orange juice to form a smooth even mixture. Pour this mixture into the tin and return to the fridge for some 4 hours or so.
  3. Decorate the cake with pieces of mandarin and chocolate shavings.
