Barbecue chicken and rice

    Delicious, simple and quick recipe for all the family! Serve these chicken chunks in BBQ sauce with rice as suggested, or with oven-baked chips.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 large onion
    • 4 skinless chicken breast fillets
    • 200g basmati rice
    • 1/2 tub smoked barbecue sauce

    1. Place oil in frying pan and allow to heat up. While the oil is heating up chop the onion finely.
    2. Add the onion to the pan and cook on a low heat. Dice the chicken breasts and add to the pan. Raise the heat to a medium level and allow chicken to cook for 15 minutes whilst stirring occasionally.
    3. Rinse the rice and cook according to packet instructions.
    4. Once the chicken is browned add the barbecue sauce and stir thoroughly (add more if necessary). Allow time to cook for the sauce to go sticky.
    5. Drain rice and serve with the chicken.
