About this recipe:This can be varied to have whatever filling you like, nuts, white chocolate, dried fruit, chocolate caramel. I have experimented with the basic recipe many times. Kids adore this gooey treat!
350g dark chocolate (does not have to be expensive)
250g dark brown sugar
55g plain flour
1 tsp baking powder
150g nuts, fruit, white chocolate, etc.

Grease a 7x11 inch baking tin and heat the oven to 160 C / 140 C fan / Gas 3.
Place the butter and chocolate (broken up) into a pan (or bowl to microwave) and heat, stirring until melted. Set aside.
In another bowl whisk the eggs until frothy and gradually add the sugar. Whisk until thick and glossy.
Fold in the chocolate mixture to the egg mixture gently until blended.
Stir in the flour, baking powder and other preferred filling ingredient (you can use chopped nuts, fruit, chopped chocolate, etc.). Of course you can leave it plain if you want.
Transfer the mix to your tray and bake for about 40 minutes until the top has a cracked appearance, the centre should still be fairly soft. Be careful not to overheat or overbake. Leave to cool completely before slicing as it can be very messy whilst still warm!
This is a really nice recipe as a weekend treat, also great in children's lunch boxes, for parties or just to enjoy alone with coffee! Usually I increase the quantities to make a larger tray.
