Mammy's fabulous fruit crumble

    This is the most versatile crumble recipe, made in the microwave. Choose a combination of fruits, and whip up a topping!

    Serves: 6 

    • 75g (3 oz) butter
    • 55g (2 oz) sugar
    • 55g (2 oz) plain flour
    • 75g (3 oz) oats
    • 450 to 675g (1 to 1.5 lb) fruit
    • sugar to taste
    • 25g (1 oz) raisins (optional)

    1. In a food processor, combine the butter, 55g sugar and flour. Add the oats, and mix until just combined.
    2. Wash, peel (if necessary) and chop the fruit. Place in a large, microwave proof dish. Sprinkle over as much sugar as you like. Add the raisins to the fruit if using.
    3. Put on the topping. Make sure the topping is evenly spread across the dish. Press down.
    4. Microwave on high for 7 to 8 minutes. (If you prefer you can grill it instead.)


    Any fruits taste nice, some good combinations are orange rind and rhubarb, apple and raisin. The sourer the fruit, the less sugar is required in the fruit mixture.
