Healthy french toast with berry compote

    Yes, you read correctly - healthy french toast! Just as few simple substitutions and additions will make this into the perfect guilt-free Sunday breakfast!

    Serves: 1 

    • 2 eggs or 4 egg whites
    • 1/4 teaspoon mixed spice
    • 4 drops vanilla or almond extract
    • 2 slices wholemeal or 50/50 bread
    • low cal cooking spray
    • 3 tablespoons frozen mixed berries
    • sweetener to taste (optional)

    1. Mix eggs, extract and mixed spice together. (Use 2 whole eggs, or use 4 egg whites if you want a lower-fat version.)
    2. Put mixture into a shallow but wide dish, then add the bread and cover both sides, allowing it to soak up as much liquid as possible.
    3. Heat a non-stick pan and cover in cooking spray, then set to a medium-high heat before adding the bread. Add the bread and cook on both sides.
    4. Whilst cooking the bread warm the frozen berries in the microwave (about 1 1/2 minutes on high depending on power). If the berries are too tart add sweetener, honey or maple syrup to taste.
    5. Serve warm berries over the french toast, adding additional sweetener, spices, honey or maple syrup (natural sugars!) if needed!


    If you don't have any mixed spice you can use cinnamon or nutmeg, or both.
