Chicken stir fry

    A Chinese orientated dish that I had to design for school. Is a great treat for dinner. Should take around half an hour to prepare and cook. I had to design this recipe at school. Please try it and get back to me, is one of my favorites.

    Serves: 4 

    • 1 clove garlic, crushed
    • 1 tablespoon medium dry sherry
    • 1/2 tablespoon Chinese five spice
    • 1 teaspoon ground szechuan pepper
    • 1 teaspoon sugar
    • 1 teaspoon cornflour
    • 350g chicken, chopped
    • 3 teaspoons groundnut oil
    • 4 spring onions, sliced
    • 2 leeks, sliced
    • 1 red pepper, sliced

    1. Mix half the garlic, sherry, 5 spice, szechwan pepper, sugar and cornflour on a low heat on the hob. When mixed, remove from heat.
    2. In a wok, fry the chicken in the oil until cooked then remove and put to one side.
    3. Fry the rest of the garlic until golden brown then add spring onions, leeks and red pepper for 2 to 3 minutes.
    4. Add chicken and sherry mixture to vegetables and stir until thickened.
