Slice the chicken breast lengthways 3/4 of the way through to create a pocket. Place a wedge of cheese in each pocket, then sprinkle the breasts with black pepper. Wrap 3 to 4 bacon rashers around each breast. Place in a small ovenproof dish, then brush liberally with syrup.
Bake chicken in the oven for 30 to 40 minutes, or until cooked through.
Meanwhile, combine the brown sauce, ketchup, soy sauce and chilli sauce. Stir well and set aside.
When chicken has finished cooking, pour sauce over chicken and serve.
