    About this recipe: An easy, no-fuss three ingredient ice cream that everyone loves. You can also add chocolate shavings, chips, chunks, or whatever takes your fancy!

    Ingredients
    Serves: 4 

    • 3 lemons
    • 175g icing sugar
    • 300ml double cream

    Method
    Prep:10min  ›  Extra time:8hr freezing  ›  Ready in:8hr10min 

    1. Grate the rind of the lemons into a bowl. Juice all lemons into same bowl. Add the icing sugar and mix by hand.
    2. Pour in the cream and using an electric whisk mix until it forms soft peaks.
    3. Scoop into a suitable freezable container with a lid. For best results freeze overnight.

    Tip

    This ice cream has also be made using 1 orange and 2 lemons; 1 orange and 2 limes; or a selection of berries (juices and whole fruits). Each time it has been a huge success. It takes about 5 to 10 minutes to make and is a family favourite at any of our get togethers!

    Speaking as someone who's allergic to eggs, this is lovely! Probably the nearest I'll get to ice-cream in the future. Just one thing, I'd say that for those who can eat regular ice-cream, it wouldn't seem exactly cie-creamy........ but if it was to be retitled some thing like 'Lemon Frozen Cream' that'd describe it exactly...... and it's lovely! - 28 Feb 2015
