J's roast beef in pastry

About this recipe: This beef recipe is a quick and easy way to make the Sunday roast extra special.

Serves: 4 

  • 1 (500g) beef brisket joint
  • salt and black pepper to taste
  • 1 small tub mushroom pate
  • 1 sheet ready rolled puff pastry
  • milk or beaten egg, for brushing

Prep:15min  ›  Cook:1hr  ›  Extra time:10min  ›  Ready in:1hr25min 

  1. Season the joint well with salt and pepper, and place on a roasting tray. Roast the beef in a preheated oven at 200 C / 180 C Fan / Gas 6 for 45 minutes, or to your liking.
  2. Allow beef to rest for 5 to 10 minutes. If necessary, untie the brisket and allow to unroll.
  3. Spread the pate onto the pastry (as if buttering bread).
  4. Wrap the beef in the pastry and fold in the ends. Brush over with milk or beaten egg.
  5. Cook in the preheated oven for 15 minutes, according to pastry manufacturer's instructions, or till golden brown.


Allowing the joint to unroll will give a nice beef to pastry ratio.
