About this recipe:I made this recipe when I was trying to make cakes with a small amount of ingredients. It creates 21+ cakes but if you want more you can double it or halve it if you want less. I try to make better cakes but I haven't found a better recipe yet.

Preheat the oven to 180 C / Gas 4.
Whisk together the eggs, sugar and butter till smooth. Add a teaspoon of flavouring, if using, such as vanilla or almond extract.
Sift together the flour and cocoa, and add to the butter mixture. Stir till well combined. Divide the mixture evenly between cupcake cases.
Bake in the preheated oven for 10 to 20 minutes, or until risen and a skewer comes out clean when inserted in the centre of a cupcake. Allow the cupcakes to cool.
Make the icing: Add water to the icing sugar, a little at a time, stirring between each addition. You may not need all of the water. Stir till smooth and thick but spreadable. Add food colouring, if liked.
Spread the icing over the cooled cupcakes and enjoy!
For plain cupcakes, skip the cocoa powder and increase the flour to 140g.
