Pickled herring salad with a sweet dressing

About this recipe: Most people hate pickled herring but I am going to convince them that it can taste nice! My pickled herring salad is pickled herring on a bed of rocket and other veggies with spicy garnishes and a soft cheesy filling. I would eat this with a Chablis 2011. It is an interesting dish for a dinner party starter!

Serves: 1 

  • 75g mild Brie cheese
  • 1 handful rocket
  • 1 bunch coriander, finely chopped
  • 1 red chilli
  • 5 small chunks pickled herring
  • 1 small knob root ginger
  • 1 spring onion, sliced
  • For the dressing
  • 2 teaspoons honey
  • 1 clove garlic, crushed
  • 2 tablespoons olive oil
  • 1/2 tablespoon vegetable oil
  • 1 tablespoon white wine vinegar
  • 1 lemon, juiced
  • salt and pepper to taste

  1. Chop Brie into chunks then place in small bowl and heat in microwave on medium for 50 seconds. Leave to cool for a minute.
  2. Place Brie on plate in a semi-circle. In a bowl put the rocket and finely chopped coriander together.
  3. Chop the chilli and rub the herring with it. Then place 2 of the chunks of herring in the bowl with the rocket. Grate the ginger over it. Sprinkle the chilli over the salad then finely chop the spring onion then sprinkle that over as well. Add the rest of the herring.
  4. To make your dressing, mix the honey and garlic then add the vinegar and oils and mix. Season to taste, then add the lemon juice last. Pour the dressing over the salad then toss the salad.
  5. Place dressed salad on top of the cheese and garnish with a sprig of parsley. Enjoy!


Add paprika instead of chilli if you want a more smokey taste. You can use Emmental cheese instead of the Brie. You can marinade the herring in chilli, lemon juice, garlic and water if you have more time.
