Herbed breadcrumb vegetarian stuffing

    It's easy to make a savoury vegetarian stuffing that pleases everyone at the table. This stuffing features an array of aromatic fresh herbs, but you can use a single herb, such as sage, if desired.

    • 40g butter
    • 4 onions, chopped
    • 3 sticks celery, chopped
    • 2 cloves garlic, finely chopped
    • 170g fresh breadcrumbs
    • 2 tablespoons chopped fresh parsley
    • 1 tablespoon chopped fresh sage
    • 1 teaspoon chopped fresh rosemary
    • 1 sprig thyme
    • 1/2 teaspoon dried oregano
    • 150ml vegetable stock, or as needed
    • salt and pepper

    1. Melt the butter in a frying pan over medium heat, and cook and stir the onion and celery until soft, about 4 minutes. Add the garlic and cook and stir another 1 minute.
    2. Transfer the onion mixture into a bowl with the breadcrumbs and herbs and stir in the stock. The stuffing should be uniformly moist but not soggy. Season generously with salt and pepper. Put all of the stuffing into a lightly greased ovenproof dish.
    3. Bake, covered, in a preheated oven at 200 C / Gas 6 until heated through, about 40 minutes. Uncover during the last 10 minutes of cooking time to crisp the top.
