Super easy, super fast macaroon tarts

    These are the easiest macaroons I have ever seen. The macaroon filling is encased in a quick and easy pastry.

    Makes: 12 macaroon tarts

    • 150g plain flour
    • 75g block margarine
    • cold water
    • 50g ground almonds
    • 50g caster sugar
    • 1 egg, beaten
    • 6 teaspoons jam
    • extra sugar for sprinkling

    1. Sieve flour into a bowl. Rub margarine into flour until the mixture clumps, but you cannot see the margarine. Add cold water gradually, mixing in until you can clump the mixture into a big ball.
    2. Roll the pastry out thinly. Cut out circles and line 12 patty tins.
    3. Mix almond and sugar with beaten egg to make a soft mixture.
    4. Place a little jam in each case, then top with a small spoonful of almond mixture. Sprinkle each with caster sugar, then make thin strips from the trimming and make crosses on the cakes.
    5. Bake at 200 C / Gas 6 for 15 minutes, or until golden and set.


    If you want, you can use 40g of margarine and 35g of white fat, or use butter instead of margarine. Also, you can use a pinch of salt in the pastry.
