Vegan chewy chocolate chip cookies

    The best vegan cookies I have ever eaten! I found this recipe online and modified it a bit and... wow! My friends with dairy or egg allergies and even those without any at all come to munch on these cookies when they are baked. Some of the ingredients are quite specific, eg flax meal and molasses, but I promise it is an investment in delicious cookies. You can mix up the chocolate for dried fruit, etc., but I recommend chocolate, yum!

    Serves: 24 

    • 2 tablespoons flax meal
    • 3 tablespoons water
    • 280g plain flour
    • 3/4 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 1/4 teaspoon salt
    • 190g vegan margarine
    • 170g caster sugar
    • 2 teaspoons molasses
    • 2 teaspoons vanilla extract
    • 150g plain chocolate chips

    1. Heat oven to 180 C / Gas 4 and line 2 baking trays with baking parchment.
    2. Mix flax meal and water and leave to thicken for 10 minutes (or until needed).
    3. Mix flour, baking powder, cinnamon and salt, set this aside.
    4. Cream together margarine and sugar (easiest with an electric whisk). Beat into the creamed mixture the flax meal, molasses and vanilla extract.
    5. Combine the flour mix and creamed mixture. Stir in chocolate chips. Spoon onto tray using a teaspoon (one heaped teaspoon per cookie) placed 7cm apart and slightly flatten with fingertips.
    6. Bake for 15 minutes, rotating half way (the cookies won't darken in colour so keep an eye on the time, they will be crispy on the edges and soft on the middle once cooled).


    A really easy to make sweet treat, preparation and cooking time will take under 30 minutes! Enjoy!
