Rhubarb sponge cake with crumble topping

Very easy recipe for rhubarb sponge cake with crumble topping. You can use almost any fruit in place of the rhubarb.

Use the full amount of rhubarb from recipe, I didn't and it was not really juicy enough. Took 45 mins to cook. Simple but tasty.

Had a load of rhubarb out of the garden to use and tried this recipe as I happened to have all the ingredients at home! It's very simple to make and bakes perfectly 😀 I took it into work and it disappeared in a few hours, very moist and flavourful! Would work just as well without the crumble topping if you wanted to whip up a quick and tasty cake 😊

I made this cake at least 10 times. Delicious and nice looking for the time and the work involved and the size is perfect for a party. I also added vanilla and rum in the dough. I live in Germany and I cannot find such moist & soft cake here.

loved the result, i used half the amounts as there are only 2 of us, i also used tinned rhubarb which worked a treat and was moist and tasty, will deffo make this again and again.. thanks :-)
