    About this recipe: These scrummy, moist macaroons take me back to my mum's kitchen on a Friday after school, the best place to be!

    Ingredients
    Makes: 16 macaroons

    • 40g plain flour
    • 1/4 teaspoon salt
    • 225g deciccated coconut
    • 170ml sweetened condensed milk
    • 1 teaspoon vanilla extract

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Preheat oven to 180 C / Gas 4. Line two baking trays with baking parchment.
    2. Sift the plain flour and salt into a bowl, stir in the coconut. Pour in the condensed milk and add the vanilla extract. Mix until combined.
    3. Drop tablespoons full onto the baking tray (or use an ice-cream scoop to make them even sized) place 2.5cm apart.
    4. Bake for 20 minutes or until golden brown. Cool on a wire rack. Then turn the radio on, sit back with a coffee and enjoy!
