Yummy Vegan Cupcakes!

    I made up this recipe when I turned vegan for Lent. I wanted to enjoy a treat, so I tried these and they were AMAZING! I hope you like them, and please let me know what you think!! Recipe makes roughly 12 small cupcakes.

    Makes: 12 small cupcakes

    • 150g soya butter
    • 90g sugar
    • 200ml soya milk/ coconut milk
    • 100g self-raising flour
    • 1/2 tsp. bicarbonate of soda
    • A few drops of vanilla extract (optional)

    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Whisk the soya butter and sugar in a bowl.
    2. Then add the milk and whisk well.
    3. Mix in the flour and soda with a spoon.
    4. Add a few drops of vanilla extract if you wish.
    5. Spoon into cupcake cases and bake in the oven at 180 degrees until well baked and browned.
    6. Enjoy!
