Simple no bake lemon cheesecake

    A very easy no bake lemon cheesecake recipe that requires hardly any effort! You could add a drop of vanilla extract, too, if liked.

    Makes: 1 lemon cheesecake

    • 225g digestive biscuits
    • 125g butter or margarine, melted
    • 125g cream cheese
    • 1 (397g) tin condensed sweetened milk
    • 1 lemon, zested and juiced

    1. Crush the biscuits in a plastic food bag. Pour into a bowl and combine with the melted butter.
    2. Line a round tin with foil and place biscuit mixture on top. Flatten out evenly with the bottom of a glass. Place in the fridge to chill for 1 hour.
    3. For the filling, soften the cheese slightly in the microwave for just a few seconds if it is straight from the fridge.
    4. Combine the softened cheese with the milk, lemon zest and lemon juice. Stir well.
    5. Pour the filling over the chilled base. Place back in the fridge till set, about an hour or more. And there you go - a simple dessert that's very yummy!!

    Very easy recipe and delicious result - will definitely make it again. I added a little ground ginger to the biscuits and topped the cheesecake before serving, with blueberries and raspberries.  -  27 Mar 2014


    Made this last night, the topping doesn't seem to be enough to fill the tin. It looks like base & topping are the same thickness. Tastes lovely though, may double the topping quantities next time. Also added 1tsp ginger to the biscuit crumbs.  -  23 Oct 2015
