Lamb's lettuce salad

    This easy to make lamb's lettuce salad is the perfect accompaniment to a summer meal. Fresh lamb's lettuce is gently tossed with ripe avocados, spring onions, cucumber and celery to give a nicely balanced and refreshing salad. Lamb's lettuce can be enjoyed all throughout its long growing season from May through to November.

    Serves: 4 

    • 450g lamb's lettuce
    • 2 large avocados, sliced
    • 1 bunch spring onions, chopped
    • 1/2 cucumber, sliced
    • 2 sticks celery, thinly sliced
    • 1 apple, cored and thinly sliced
    • 1 bunch fresh chives, chopped
    • 2 tablespoons chopped sun dried tomatoes
    • olive oil, to taste
    • salt and pepper, to taste

    1. In a large bowl, combine the lamb's lettuce, avocados, spring onions, cucumber, celery, apple, chives and tomatoes.
    2. Just prior to serving, drizzle with olive oil and season with salt and pepper. Toss and serve immediately.


    Lamb's lettuce, also known as corn salad, is best during the months of early summer through to autumn. This tasty and versatile lettuce is great in salads and has a distinctive tangy flavour. Named after its resemblance in shape and size to lamb's tongue.
