80g frozen or fresh soft berries, such as raspberries

Whisk the egg white in a medium bowl or measuring jug until it is light and fluffy. Add the sweetener and whisk again. Add the berries and whisk until you have a thick, foamy mixture. Pour the mixture into a (very large) microwavable mug.
Microwave on high for about 50 seconds but keep an eye on it as it can overflow very quickly.
Eat directly out of the mug or tip out onto a plate. Delicious served with fresh berries, Greek yoghurt and mint.
