Fudgy flourless chocolate cake

    This decadent chocolate cake is baked twice to ensure that it keeps that delicious gooey chocolate centre.

    Serves: 8 

    • 7 eggs
    • 200g plain chocolate (60% cocoa solids)
    • 2 tablespoons cocoa powder
    • 150g butter
    • 220g caster sugar, divided
    • pinch of salt

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a baking tray. Separate the egg yolks from egg whites into two bowls.
    2. Beat eggs yolks and 150g caster sugar until the mixture thickens slightly and becomes lighter in colour.
    3. Melt chocolate and butter over double boiler; stir well. Add melted chocolate and butter to egg yolk mixture; mix well.
    4. Beat egg whites with a pinch of salt until soft peaks form. Gradually add 70g sugar and 2 tablespoons cocoa powder. Gently fold whipped egg whites into chocolate mixture.
    5. Pour 2/3 of the cake batter into the baking tray. Refrigerate the rest of the mixture.
    6. Bake in preheated oven for 15 minutes. Remove and set aside to cool. Spread the rest of the cake mixture over the top of the cooled cake; refrigerate for 1 more hour.
    7. Bake again at 180 C/ Gas 4 for 10 minutes, to slightly cook the top. Cool.
    8. The top of the cake should be slightly undercooked, but not runny. Sprinkle with icing sugar when cooled.
