Tomato and bacon penne pasta bake

    A dish that nobody at home can complain about (unless they are vegetarian). Delicious tomato sauce combined with tasty bacon, all baked with melted cheese on top.

    Serves: 6 

    • 80g Cheddar cheese
    • 6 rashers of unsmoked bacon
    • 1 tin of chopped tomatoes
    • 1 tin of tomato soup
    • 2 cloves of garlic
    • 1 onion
    • 300g of penne pasta
    • A pinch of salt and pepper
    • 1 pepper (optional)
    • Olive oil
    • Tomato puree

    1. Prepare the oven by heating to 180 ºc. Then fill a large saucepan with water and bring to the boil. Reduce the heat then add all of the pasta. Cook for approximately 10 minutes, stirring occasionally to ensure that there is no sticking. Once cooked, drain, then place to the side for later.
    2. Meanwhile, finely chop the onion, garlics and pepper (if using). Also chop the bacon into bite size chunks. Place some oil in a frying pan and heat for a minute. Then add the onion, garlic and peppers and fry for five minutes stirring constantly. When softened, add the bacon and cook until evenly brown.
    3. Once the bacon is cooked, add the tomatoes, the tomato puree and the tomato soup. Stir for 5 minutes then add the cooked pasta. Stir for another 2 minutes to cover all the pasta in sauce then remove from the heat.
    4. Tip the pasta sauce into an oven proof dish. Grate the cheddar cheese over the top until all of the sauce is covered. Place in the oven and bake for 10 minutes. Remove from the oven after the time is up and turn off the heat. Serve hot.
