Extra crispy Southern fried chicken fillets

    Nicest Southern fried fillets I have ever tasted, I made this recipe by combining several to develop what I think is the nicest fried chicken around!

    Serves: 4 

    • 2 medium eggs
    • 50g butter
    • 250ml milk
    • 500g chicken fillets, sliced into 1 to 1.5cm thick strips
    • 250g plain flour
    • 50g partally crushed cornflakes
    • 1 tablespoon paprika
    • 1 tablespoon cayenne pepper
    • 1 teaspoon garlic salt
    • 1/2 to 1 teaspoon chilli powder (optional)
    • 1 teaspoon salt
    • 1 teaspoon herbes de Provence
    • 1 good pinch ground black pepper
    • oil for deep frying

    1. Beat the 2 eggs in a large bowl.
    2. Melt the butter for 30 seconds in microwave. Add butter and milk to the beaten eggs.
    3. Soak chicken in milk mix for 5 minutes.
    4. In a separate large bowl, combine all other ingredients except for the oil.
    5. Transfer chicken to flour mix, ensuring all chicken is thoroughly covered. Leave the chicken in the flour for approximately 30 minutes until the chicken develops a paste like coating (this is perhaps the most important thing as it ensures the coating remains on the chicken when cooking).
    6. Preheat fryer with oil to 190 degrees C and carefully lower chicken in. Cook for 5 minutes until golden brown all over (dependent upon size of fryer you may have to cook the chicken in a couple of batches).
    7. Serve immediately with favourite sides and enjoy!
