Melt the butter for 30 seconds in microwave. Add butter and milk to the beaten eggs.
Soak chicken in milk mix for 5 minutes.
In a separate large bowl, combine all other ingredients except for the oil.
Transfer chicken to flour mix, ensuring all chicken is thoroughly covered. Leave the chicken in the flour for approximately 30 minutes until the chicken develops a paste like coating (this is perhaps the most important thing as it ensures the coating remains on the chicken when cooking).
Preheat fryer with oil to 190 degrees C and carefully lower chicken in. Cook for 5 minutes until golden brown all over (dependent upon size of fryer you may have to cook the chicken in a couple of batches).
