Asian pork chops

    Asian style marinated pork chops with mixed vegetables and stir fry noodles. Quick, easy and delicious!

    Serves: 2 

    • 2 pork chops
    • 2 garlic cloves, chopped
    • 2 tablespoons soy sauce
    • salt and black pepper to taste
    • 1 pinch ground coriander
    • 1 generous pinch Chinese five spice powder
    • 1/4 broccoli
    • 4 spring onions
    • 1/4 cabbage
    • 2 carrots
    • olive oil for frying
    • 100g stir fry noodles

    1. Marinate the chops in soy sauce, garlic, spices, salt and pepper for 30 minutes.
    2. Slice up all the vegetables, then fry in some olive oil and a generous helping of seasoning and extra spices to taste. Cook until tender but crisp.
    3. Add the marinated pork chops, and cook until golden brown. Leave to simmer for 5 minutes.
    4. Cook noodles according to packet instructions. Add noodles to the pork and veg medley and serve!

    Replaced the pork chops with quorn and didn't include any broccoli (can't stand the stuff!) and this was absolutely gorgeous! Will definitely make again, thank you!  -  10 Nov 2015
