About this recipe: When life gives you lemons, make lemon cordial! This incredible recipe has been passed down the family generations and it never disappoints us. Perfect for summer al fresco dining and a great addition to any barbecue or picnic. Enjoy diluted with sparkling water.


Makes: 1 litre cordial

  • juice and zest of 6 lemons
  • 900g caster sugar
  • 4 tablespoons citric acid
  • 1.2 litres boiling water

  1. In a bowl, combine the lemon juice, zest, sugar and citric acid. Pour over the boiling water and stir until the sugar dissolves. Leave overnight.
  2. The next day, pour into sterilised bottles. Once opened, store in the fridge in between use.


To drink, dilute to taste with sparkling water.
If you do not wish to have the lemon zest in your cordial, you can pass the liquid through a fine sieve prior to bottling.
