For an extra wow factor you can make extra honeycomb for wafer garnishes.
5 tablespoons caster sugar
2 tablespoons golden syrup
1 teaspoon bicarbonate of soda
600ml double cream
1 (397g) tin condensed milk

In a saucepan over a medium heat, melt the sugar and syrup together and bring to the boil for 4 minutes. Remove from the heat and add the bicarbonate of soda. Pour onto a sheet of greaseproof paper and leave to cool.
In a bowl, whip the cream until light and fluffy then fold in the condensed milk. Break up the cooled honeycomb and fold into the cream. Spoon into a container and freeze until hardened.
