Honeycomb ice cream

    This honeycomb ice cream recipe is out of this world good and so simple to make. This incredible ice cream will become your new family favourite, as it is ours, after just one tasting. Easy to make ahead and great with warm apple tart or a nut cake. For an extra wow factor you can make extra honeycomb for wafer garnishes.

    Serves: 4 

    • 5 tablespoons caster sugar
    • 2 tablespoons golden syrup
    • 1 teaspoon bicarbonate of soda
    • 600ml double cream
    • 1 (397g) tin condensed milk

    1. In a saucepan over a medium heat, melt the sugar and syrup together and bring to the boil for 4 minutes. Remove from the heat and add the bicarbonate of soda. Pour onto a sheet of greaseproof paper and leave to cool.
    2. In a bowl, whip the cream until light and fluffy then fold in the condensed milk. Break up the cooled honeycomb and fold into the cream. Spoon into a container and freeze until hardened.
