Made with fromage frais or yogurt, this rich, smooth and refreshing dressing is lower in fat than traditional creamy dressings based on mayonnaise. It can be stored in the fridge for 1–2 days.
Ingredients

120 ml (4 fl oz) fromage frais or Greek-style yogurt

1 tbsp lemon juice

2 tsp white wine vinegar

pinch of caster sugar

salt
Preparation method
- Put all the ingredients into a bowl, adding salt to taste, and stir together until evenly blended. Taste and add more sugar, salt or lemon juice, if necessary.
- Cover the bowl with cling film and keep the dressing in the fridge until ready to use.

For an even lower fat dressing, use 8%-fat fromage frais and half-fat Greek-style yogurt. The result will still be very creamy. * Add 1–2 tsp creamed horseradish for beef and smoked mackerel salads. * Add 1–2 tsp sun-dried tomato paste for seafood salads. * Add 1 finely chopped shallot for pasta salads. Alternatively, add 1 crushed garlic clove or 1 tsp garlic purée. * Add 1–2 tsp curry paste for chicken salads. * Add 1 tbsp chopped fresh herbs, such as coriander, basil (for pasta salads), parsley, chives or tarragon (for chicken salads). * To make a dip for crudités, add 1–2 tbsp grated Cheddar cheese or crumbled soft blue cheese, such as Roquefort or Dolcelatte.
