About this recipe: Yummy ratatouille, which is easy to prepare, delicious and very healthy. Serve in a jacket potato, or with crusty bread or rice.

Serves: 4 

  • olive oil, as needed
  • 2 garlic cloves, chopped
  • 1 1/2 onions, chopped
  • 3 mixed peppers, chopped
  • 2 meduim courgettes, chopped
  • 1 (400g) tin chopped tomatoes
  • 2 Knorr® herb infusion pots
  • 2 tablespoons tomato puree
  • dried mixed herbs, to taste
  • 1/2 pack cherry tomatoes, chopped
  • salt and pepper to taste

  1. Heat a generous drizzle of oil in a large frying pan. Add 1/3 of the onion and the garlic and cook till softened and golden.
  2. Add the peppers, courgette and remaining onion and cook for a few minutes, stirring well, before adding the remaining ingredients. Bring to the boil, then reduce to a simmer and cook uncovered for about 10 minutes, or till the sauce has thickened.
