A BBQ sauce with Spanish flavour, straight from the sun-filled Spanish Costas. This will light up any barbecue.

Ingredients
Makes: 500 ml BBQ sauce
- 350ml (12 fl oz) tomato ketchup
- 200g (7 oz) soft brown sugar
- 100ml (3 1/2 fl oz) red wine vinegar
- 4 tablespoons honey
- 55g (2 oz) butter
- 1/2 small red chilli, chopped (or to taste)
- 1/2 red onion, finely chopped
- 3 cloves garlic, finely chopped
- 1/2 to 3/4 teaspoon cayenne pepper
- 1/2 to 3/4 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper

- Place all the ingredients in a saucepan over high heat and, stirring continuously, bring to the boil.
- Reduce heat to low and simmer gently, stirring occasionally, for some 20 minutes or so until mixture is cooked and sauce has thickened slightly.
- Blitz with a hand blender and serve or store in the fridge till needed.
