Giant cupcake

    This amazing giant cupcake will stand out at any birthday, wedding or even just as a little treat! You will need a giant cupcake mould (you can buy one from Aldi® stores).

    Makes: 1 giant cupcake

    • 340g (12 oz) butter, softened
    • 340g (12 oz) caster sugar
    • 340g (12 oz) self-raising flour, sieved
    • 6 medium eggs, lightly beaten

    1. Pre heat the oven to 160 C / 140 C Fan / Gas 3. If using a tin giant cupcake mould, be sure to thoroughly grease and flour all sides. If using a silicone mould, no need to grease.
    2. Cream the butter and sugar together until light and fluffy. Add in the flour alternately with the eggs, a little at a time, beating after each addition. Divide the mixture between the top and bottom giant cupcake moulds.
    3. Bake in the preheated oven for 50 minutes to 1 hour, or until a skewer inserted in the centre comes out clean. Cool in the tin, then turn out to completely on a wire rack before icing with your favourite buttercream.

    Flavour tips

    You can add your favourite flavourings to this giant cupcake recipe, which is a great base recipe. Try adding 1 teaspoon of vanilla or almond extract; 1 to 2 teaspoons lemon or orange zest; up to 100g dried currants or chocolate chips. Get creative and enjoy decorating your giant cupcake!

    I've made this recipe twice in the last couple of days - one as an experiment and then the other as a Birthday cake!! Both times I have had to give them about 70 minutes to cook but been fine!! Very happy!! Just posted a picture of the undecorated cake for people to see!!  -  20 Jan 2014


    This is the amzing way to surprise your friends. Just add some butter cream and mabye sandwich it together with some fresh cream and jam (raspberry jam is great but it's up to you) Enjoy this great treat  -  03 Jul 2013


    Used this recipe but adapted it slightly to make it a marble cupcake with chocolate butter cream, worked really well. A lovely easy recipe which gives a fantastic tasting cake when done.  -  28 Jan 2014
