Pre heat the oven to 160 C / 140 C Fan / Gas 3. If using a tin giant cupcake mould, be sure to thoroughly grease and flour all sides. If using a silicone mould, no need to grease.
Cream the butter and sugar together until light and fluffy. Add in the flour alternately with the eggs, a little at a time, beating after each addition. Divide the mixture between the top and bottom giant cupcake moulds.
Bake in the preheated oven for 50 minutes to 1 hour, or until a skewer inserted in the centre comes out clean. Cool in the tin, then turn out to completely on a wire rack before icing with your favourite buttercream.
You can add your favourite flavourings to this giant cupcake recipe, which is a great base recipe. Try adding 1 teaspoon of vanilla or almond extract; 1 to 2 teaspoons lemon or orange zest; up to 100g dried currants or chocolate chips. Get creative and enjoy decorating your giant cupcake!
I've made this recipe twice in the last couple of days - one as an experiment and then the other as a Birthday cake!! Both times I have had to give them about 70 minutes to cook but been fine!!
