Banana bread muffins

    Brown bananas are only good for one thing: banana bread, an upsettingly rare sighting. Topped with fudge and chocolate, these devilishly good muffins won't last long.

    Makes: 14 banana bread muffins

    • 2 eggs
    • 270g light brown muscovado sugar
    • 250g mashed banana
    • 280g self raising flour
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon bicarbonate of soda
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground ginger
    • 140g unsalted butter, melted
    • 100g fudge chunks
    • 100g milk chocolate, melted
    • 1 splash, milk

    1. Preheat the oven to 170 C / Gas 3.
    2. In a large mixing bowl whisk together the eggs and sugar then add the mashed banana. Sift in the flour, baking powder, bicarbonate of soda, cinnamon and ginger. Pour in the melted butter and mix until smooth. Spoon a large tablespoon into fourteen muffin cases. Sprinkle over the fudge chunks, pushing them down into the mixture a little with a spoon.
    3. Bake in preheated oven for 25 minutes until a skewer inserted into the centre comes out clean.
    4. Spread a little of the melted chocolate onto the tops of the muffins and allow to cool.
