About this recipe:This Dutch favourite translates as 'spicy biscuit pieces' and is a favourite in the Netherlands on or before the St Nicholas feast in early December. These delightful biscuits have a consistency somewhat similar to shortbread and a wonderful spiced flavour.
100g soft brown sugar
250g plain flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1/4 teaspoon aniseed
3 tablespoons milk
1 tablespoon double cream
100g blanched whole almonds

In a large bowl, cream together the butter and the sugar until light and fluffy. Sift in the flour, baking powder, salt and spices. Mix well and slowly fold in the milk to make a soft dough. Cover and leave in a cool place for at least 4 hours.
Preheat the oven to 180 C / Gas 4. Grease a large baking tray or line with baking parchment.
On a floured surface, roll out the dough to a rectangle shape, about 1cm thick, and transfer to the prepared tray. Brush with cream and press in the almonds.
Bake for 60 minutes until firm. Remove from the oven and turn out onto a cooling rack. When cooled completely, break into pieces.
